Ingredients
- Bread: 8 slices whole wheat or white sandwich bread
- Filling: 120 g (4 oz) cream cheese, softened, 2 tbsp mayonnaise, 1/4 red bell pepper, finely diced, 1/4 yellow bell pepper, finely diced, 1/4 cucumber, finely diced (seeds removed), 1 small carrot, peeled and grated, 2 tbsp chives or green onions, finely chopped, salt and freshly ground pepper, to taste
- Decoration (optional): 2 cherry tomatoes, sliced, 2 tbsp pomegranate seeds, fresh basil or parsley leaves
Instructions
- Step 1:
- Using a star-shaped cookie cutter, cut a star from each bread slice. Reserve the scraps for breadcrumbs or another use.
- Step 2:
- In a bowl, mix cream cheese and mayonnaise until smooth.
- Step 3:
- Stir in red and yellow bell peppers, cucumber, carrot, and chives. Season with salt and pepper.
- Step 4:
- Spread a generous layer of the vegetable cream cheese mixture onto half of the star-shaped bread pieces.
- Step 5:
- Top with the remaining bread stars to form sandwiches.
- Step 6:
- For decoration, gently press slices of cherry tomato, pomegranate seeds, and herbs into the top of each sandwich to resemble jewels.
- Step 7:
- Arrange on a platter and serve immediately, or cover and refrigerate up to 2 hours before serving.
