01 - 450 g large shrimp, peeled and deveined
02 - 2 medium ripe mangoes, peeled and diced
03 - 120 g mixed baby greens
04 - 70 g red onion, thinly sliced
05 - 1 medium avocado, diced
06 - 50 g fresh cilantro leaves, chopped
→ Dressing
07 - 45 ml extra-virgin olive oil
08 - 30 ml fresh lime juice
09 - 10 ml honey
10 - 3 g sea salt
11 - 2 g black pepper, freshly ground
→ Shrimp Marinade
12 - 15 ml olive oil
13 - 3 g garlic powder
14 - 3 g smoked paprika
15 - 2 g salt
16 - 2 g black pepper
# Method:
01 - Combine olive oil, garlic powder, smoked paprika, salt, and pepper in a bowl. Add shrimp and toss to evenly coat. Allow to marinate for 15 minutes in the refrigerator.
02 - Preheat a grill or grill pan to medium-high heat. Arrange marinated shrimp on skewers and grill for 2–3 minutes per side, until opaque and lightly charred. Remove from heat and set aside.
03 - In a large serving bowl, combine baby greens, mango cubes, red onion slices, diced avocado, and chopped cilantro.
04 - Whisk together extra-virgin olive oil, lime juice, honey, sea salt, and black pepper in a small bowl until emulsified.
05 - Add grilled shrimp to the salad mixture. Drizzle with dressing and gently toss to coat evenly. Serve immediately.
